Healthy Recipe for Easter Breakfast

Need a simple, healthy breakfast recipe this Easter? We have one for you. Think of it as a play on avocado toast, maybe better. And it meets most everyone's dietary restrictions. Gluten-free, check. All you need for this fast breakfast is polenta, avocado, salt, and one of your hard boiled Easter eggs. Enjoy!

 

 

Grab a medium size pot, raw polenta, and some water. Bring about 4 cups of water to a boil in the medium size pot. Add a cup of polenta (serves 4). Cook for five minutes, stirring occasionally. 

 

 

Remove the polenta from heat. Stir. Add 2-3 teaspoons of salt. Then add a 1/2-1 cup to each bowl. 

 

Grab a ripe avocado. Slice in half. Remove the pit. Peel each half. Then slice in half moon shapes. Place on top of polenta. 

 

 

Grab an egg and grater. Peel the egg. Then run the egg through the grater like cheese. Top each bowl with the shredded egg. Top with a pinch of salt and you are ready to enjoy this healthy easter breakfast.
