Making granola is a lovely way to ease into a Saturday morning at home. A little coffee, a bit of mixing, a little more coffee and patience. The most challenging part of this recipe is the one hour bake time. It is well worth the wait. It leads to a full week of enjoyment. Especially enjoying Sunday morning in bed.
To kick it off grab a large bowl. Add all dry ingredients to the bowl. Preheat oven to 250 degrees.
2 1/2 Cups Rolled Oats
1/2 Cup Shredded Coconut
1/4 Cup Chia Seeds (or any seed you have)
2 Tbsp Poppy seed's
2 Tsp Salt
1/2 Cup Slivered Almonds (or any nut in the pantry)
1/2 Tsp Cinnamon
Add oil, honey, and vanilla to the dry ingredients. Mix together. Add honey to measuring cup after oil.
1 Tsp Vanilla Extract
1/2 Cup Walnut Oil
1/2 Cup Honey (or maple syrup)
Coat a sheet pan with walnut oil or layer it with parchment paper. Spread the granola out on the pan. Bake for 1 Hour. Take it out of the oven. Stir and then place in the oven for 15 minutes. Remove, cool, and . . .
Enjoy with meyer lemon yogurt or cashew cream!
1 1/2 Cups Raw Slivered Cashews
1/2 Cup Water
2-4 Tbsp of Honey or Maple Syrup
1/2 Tsp Salt
1 Tsp Vanilla Extract or Beans
Optional: 1/2 Med Banana
Soak the cashews in cool water for at least 2 hours. Drain. Then place cashews and remaining ingredients in a mixer. A Vitamix works beautifully. Blend at high for about 2 minutes or until smooth. Taste and add more honey or syrup to taste.
